Slimming Summer Chicken Salad

Creamy Yogurt Summer Chicken Salad

Ingredients:

  • 1 pound chicken breasts cooked and cubed into bite-sized pieces
  • ½ cup non-fat plain Greek yogurt (organic is best)
  • 2 tsp Dijon mustard
  • 1 cup halved seedless red or green grapes (organic is best)
    other fruits like apples or dried cranberries also could be used.
  • ½ cup of chopped celery
  • Sea salt and garlic powder to taste
  • Optional ½ cup of chopped pecans (or nut of your choice) for added crunch

Instructions:

  • Whisk together Greek yogurt, Dijon mustard, and garlic powder together until well mixed. Add in salt and pepper, to taste.
  • Next, stir in dried celery, grapes and optional pecans. If you’re worried about the pecans getting too soft, you could add them right before serving!
  • Dice up the chicken and mix it into the sauce.
  • You can either serve this immediately, or place in the refrigerator for up to 4 days!
